Bright, vibrant, ripe raspberry flavors brim from this brilliant coral wine, which marries succulent fruit intensity and fresh peppery notes to a zingy core of clean, refreshing acidity and a long, dry finish.

The qualities of climate and soil allied to a controlled vinification and experienced assembly of each variety make Tavel unique among rosés in intensity of color, body and bouquet. Château d’Aquéria is the quintessential Tavel, vibrant salmon-pink in color, with a penetrating fruit fragrance offset by floral notes. Bone dry, full bodied and succulently fruity on the palate, its lush intensity and depth are balanced by an extraordinarily refreshing acidity carrying into a long, crisp finish with vibrant peppery nuances.

Wine maker notes

Hand harvesting and destemming of the fruit are followed by a maceration of 12 to 36 hours of the juice with the skins to extract color. The grapes are then pressed and natural yeasts set off the fermentation process, which is carried out over approximately eight days in temperature-controlled stainless steel tanks at 18° to 20°C (64° to 68°F). Each variety is vinified separately, without malolactic fermentation, and there no oak contact. The Grenache lends the wine fruitiness and fatness; Cinsault, finesse and length in the mouth; Clairette and Bourboulenc, aromas of fruit and flowers; and Mourvèdre, an intense, vibrant color, red fruit aromas and flavors, and longevity. The first blend is assembled in November after racking and a brief rest, followed in January by the final blending and bottling.
